Trendy and tasteful Italian coffee brand Illy currently offers 6 mono varieties with each their intricate flavour nuances: Ethiopia, Guatemala, Brazil, Columbia, Costa Rica and India. To emphasise the complexity of their mono varieties (each coffee variety has about 1200 different taste characteristics) they’ve asked Michelin starred chef Viki Geunes (**) from restaurant ‘t Zilte to create a corresponding chocolate creation for each variety. In the past the praised chef already accomplished that challenging task for the Ethiopia, Guatemala and Brazil varieties from Illy. Now, the talented chef once more amazes epicurists with three new chocolate creations that perfectly match the Columbia, Costa Rica and India mono varieties.
For the chocolate bonbon to go with the Illy Monoarabica ‘Columbia’ Viki Geunes combined nutmeg, a compote of dried abricots and juice of passionfruit for the filling combined with a Javagrey milk chocolate of Domori. “It combines well with the round and subtle aromas of caramel and dried fruit that characterise this coffee variety”, says Viki Geunes. For the corresponding chocolate bonbon of the Illy Monoarabica ‘Costa Rica’ the chef of ‘t Zilte went for a combination of peanut, rum and banana combined with Arriba chocolate (70 %) of Domori. “The symbiosis of this chocolate bonbon and the ‘Costa Rica’ monovariety expresses one of the most challenging complexities between acidity, sweetness, body and bitterness”, according to Viki Geunes. For the sweet chocolate surprise to match the Monoarabica ‘India’ Viki Geunes created a chocolate bonbon with a cocoa level of 70 % and a filling of malt infused ganache combined with ‘grué de cacao’ (very fine chopped cocoa beans).
